Brooklyn is doing what Brooklyn does best: closing a chapter in one neighborhood while opening several more across the borough. This week, a wave of new spots has landed in Prospect Heights, Carroll Gardens, and Williamsburg — each one worth putting on your radar.
Grimm Artisanal Ales Tavern, Prospect Heights
One of the most anticipated Brooklyn openings of spring 2026 has arrived: Grimm Artisanal Ales is now running an all-day tavern in the former Olmsted space in Prospect Heights. If you know Olmsted, you know the room — warmly lit, welcoming, the kind of place that makes a Tuesday feel special. The Grimm team is keeping that energy alive with their own small-batch beers on tap and a comfort-food menu designed to complement the pints. Grimm has built an exceptional reputation for craft beer across Brooklyn, and having a dedicated tavern and kitchen is a significant step up. Prospect Heights now has a new go-to for low-key drinking and eating that does not require a reservation or a special occasion.
Prince Street Pizza, Carroll Gardens
The Nolita institution has finally crossed into Brooklyn. Prince Street Pizza, beloved for its cult-status spicy pepperoni squares and crispy grab-and-go slices, opened its first Brooklyn location at 271 Smith Street around April 23 — and the neighborhood has been waiting. The pepperoni square is the one to order: crunchy on the bottom, generous cheese pull, with cups of pepperoni that pool their own spiced oil. Carroll Gardens now has a genuinely excellent pizza option steps from the F and G trains, and the no-fuss walk-in format makes it a perfect weeknight pickup.
Sud NYC, Williamsburg
At 79 Grand Street in Williamsburg, Sud NYC has opened in the former Bacan space, and the concept is refreshingly uncomplicated: it is an easy Italian dinner for families and neighbors who want good food without the fuss. Pizza, simple pasta, cocktails for the adults, and a relaxed room that welcomes kids without making a production of it. The team has positioned Sud NYC as a true neighborhood restaurant — the kind of place you go on a Wednesday because you are tired and hungry and want something simple done well. Williamsburg has plenty of destination dining; what it sometimes lacks is the unpretentious middle ground. Sud NYC is filling that gap.
